For two portions take 1 pork fillet cut across the middle to create two equal portions. Make a cut along the side of each fillet to create a pocket, fill each pocket with about 50g of gorgonzola. Wrap in thin slices of parma ham then roll tightly in cling film and leave in the fridge preferably overnight. To cook seal in oil in a hot pan then bake at 180 degrees for 15-20 minutes
