Johnson and Swarbrick British Free Range Duck Breasts

Johnson and Swarbrick are famous for their Goosnargh poultry. Common in great kitchens and Fortnum’s. Meadowbrook are really proud and pleased to offer these amazing free range duck breasts

Best prepared by drying off any juices then scoring the free range duck breasts with a sharp knife across the skin, taking care not to cut to deep and into the breast meat. Sear skin side down until the skin turns crisp and brown for about 5 minutes this should release some of the duck fat. Then flip over and sear the meat side of the breast. Meanwhile brush the fat side with some mustard and then drizzle a little honey then pop the breasts under the grill to caramelise, rest and serve
