Flat Iron Steak also known as Butlers Steak or Oyster Blade.
Flat Iron taken cut ‘with the grain’ from the chuck is very lean and can be used in slow cooking. However in modern restaurants and grills the Flat Iron grilled very fast on a very hot griddle has become very popular as the Flat Iron has a great flavour, albeit it has a bit of a chew to it.
For best result if griddle cooking your Flat Iron, cook very rare, season well, rest then slice quite thinly against the grain
